Tacos Rojos de Tequis, also known as Tacos Rojos Juanita, is a family stand in the Jardín de Tequisquiapan in San Luis Potosí that has sold tacos rojos and enchiladas since about 1961.

History

The stand was founded by Juana Paredes Torres, known as Doña Juanita, a native of La Estrella in Pinos, Zacatecas, who moved to the capital as a child. She first sold tortillas and enchiladas door to door and, at someone's suggestion, set up an enchilada stand on Mariano Ávila. A woman named Camilita, who helped her in the early years, taught her to make tacos rojos, which became the best seller. Quadratín reported 58 years of operation in 2019, and El Universal San Luis Potosí reported 63 years in 2023.

The stand sits at the corner of Mariano Arista and Mariano Ávila in the Jardín de Tequisquiapan, with a charcoal brazier and a few tables. Doña Juana has retired, and her children, grandchildren and great-grandchildren run it, dividing the coals, the cooking, the plating and the cash. El Universal counted about 200 customers on weekend days and 100 to 130 on weekdays. The family cooks the vegetables and tortillas over charcoal and has said it will not switch to gas.

Tacos rojos are filled with cheese and onion, or cheese alone. The stand also makes enchiladas potosinas, quesadillas with cheese, rajas, beans, chorizo or potato, and molotes with the same fillings; diners add salsa, vegetables or cueritos themselves.
