Juana Paredes Torres, known as Doña Juanita, founded the tacos rojos stand in the Jardín de Tequisquiapan in San Luis Potosí.

Life and career

Paredes is from La Estrella, in the municipality of Pinos, Zacatecas, and moved to the city of San Luis Potosí at age eight. A mother of nine, she sold tortillas and enchiladas door to door before opening an enchilada stand on Mariano Ávila around 1961. A helper named Camilita taught her to make tacos rojos, which became the stand's best-selling dish. She insisted on cooking over charcoal rather than gas. By 2023 she had retired, and her children, grandchildren and great-grandchildren run the stand at the corner of Mariano Arista and Mariano Ávila.
