La Güera de Churubusco

La Güera de Churubusco is a tacos de guisado stand beside the Estudios Churubusco film studios in Mexico City, in business since 1942.

Overview

Chilango traces the stand to 1942, when Natividad Soriano began selling stewed-filling tacos from a basket at the Estudios Churubusco, the film studios in the south of the city. The basket eventually became a small counter set into the studio wall at Atletas 2, in colonia Country Club Churubusco.

Her granddaughter Guadalupe inherited the business and kept the original recipes, while adding fried patties (tortitas) of huauzontle and of chicken in mole. Chilango recommends the huauzontle tortitas, milanesa with potatoes and chicharrón in salsa verde, served with a green salsa and onions with habanero. The stand works weekday afternoons only.

Context

Chilango's 2023 feature En busca del taco más chilango chose one representative taquería for each of fifteen zones of the capital and its suburbs, favoring neighborhood spots over viral ones. La Güera represented the Coyoacán, San Ángel and Churubusco zone.
