Maizajo
Maizajo is a taquería and restaurant in the Condesa neighborhood of Mexico City, founded by chef Santiago Muñoz Moctezuma around native corn varieties nixtamalized in house.
Overview
Maizajo was founded by chef Santiago Muñoz Moctezuma, a promoter of nixtamalization whose project centers on preserving native corn varieties from small growers. The downstairs taquería is consistently busy, and an upstairs dining room uses I-beams and rebar as furniture. The Michelin Guide calls it a leader of the next generation of Condesa taquerías and has listed it since the first Mexican edition.
Menu
Tortillas are made in house from heirloom corn. At the counter, thin grilled steak topped with crisp potato strips is a signature, and Texas Monthly singled out the chicken milanesa taco. Upstairs, the menu adds dishes such as a blue corn tostada with yellowfin tuna and a vegetarian tamal de boda in achiote and habanero salsa. Meals begin with tostadas and a habanero and pepita salsa.
