Santiago Muñoz Moctezuma is a Mexico City chef and founder of Maizajo, a Condesa taquería built around native corn varieties nixtamalized in house.

Career

Muñoz founded Maizajo with the aim of preserving native corn varieties from across Mexico, buying from small growers and nixtamalizing and grinding the grain for the restaurant's own tortillas. Texas Monthly described him as a pioneer of nixtamalization in the city's restaurant scene.

Maizajo combines a busy street-level taquería with an upstairs dining room where Muñoz's menu extends to tostadas, tamales and other masa dishes. It has been listed in the Michelin Guide Mexico since 2024 and is featured in the guide's selection of the best tacos in Mexico City.
