Taquería Los Parados is a charcoal-grill taquería in Roma Sur, Mexico City, open since 1965, where customers traditionally eat standing.

History

The name means the standing ones, a reference to the absence of chairs; diners eat at metal shelving that serves as counters. The taquería has been open since 1965 and is regarded as an institution of the city's taco culture. It was featured in Netflix's Taco Chronicles and has been listed in the Michelin Guide Mexico, appearing among the guide's picks for the best tacos in Mexico City.

Meats are cooked to order over charcoal on a long grill and often mixed with melted white cheese. The bistec is cooked medium-well with a light smokiness, and the costilla is sliced very thin. Al pastor and arrachera are also popular, and the long menu includes a vegetarian taco of poblano chile with cheese. Taqueros are recognizable by their blue aprons.
