La Guerrerense

La Guerrerense is a seafood street cart and restaurant in downtown Ensenada, Baja California, famous for ceviche and shellfish tostadas and for the salsas of its owner, Sabina Bandera.

History

The business was started by the married couple Alberto Oviedo and Celia Carranza; a 2017 Chilango report said it had been running for 57 years, which places its start around 1960. It is now run by their daughter-in-law, Sabina Bandera, a native of the state of Guerrero, which gives the cart its name. She came to Ensenada, her husband's hometown, on their honeymoon and stayed. Her daughter Mariana also works in the business.

Anthony Bourdain visited in 2012 and praised the seafood, and food writers have since called Bandera the queen of ceviche. In 2017 the family announced plans for a branch in Mexico City's Parián Condesa, with seafood shipped from Ensenada.

The cart, a few blocks from Ensenada's fish market, offers more than twenty seafood preparations served on tostadas. Fillings include fish and shrimp ceviche, sea urchin, sea snail, pata de mula (ark clam), octopus, bacalao in a Spanish style with olives and peppers, and a campechana of mixed shellfish. Bandera prepares the seafood and salsas each morning; the salsas, including a peanut and ancho chile version, have become the stand's emblem. Shrimp tacos and a barley drink called cebada round out the offering.
