Sabina Bandera

Sabina Bandera is a Mexican seafood cook who runs La Guerrerense, a celebrated tostada cart and restaurant in Ensenada, Baja California.

Biography

Bandera comes from the state of Guerrero and grew up inland, raised on cattle and corn. She first visited Ensenada, her husband's hometown, on their honeymoon and settled there. She joined the seafood business founded by her in-laws, Alberto Oviedo and Celia Carranza, and turned it into one of the most famous street food stops in Mexico. By 2009 she had been making tostadas at the cart for 33 years, preparing all of the seafood and salsas at home each morning.

Recognition

Anthony Bourdain visited La Guerrerense in 2012 and praised her seafood, and Saveur has called her Mexico's queen of ceviche. Her salsas, among them a peanut and ancho chile salsa, are the stand's trademark. Her daughter Mariana works with her, and in 2017 the family announced an outpost in Mexico City.
