Roberto Solís is a Yucatecan chef from Mérida whose taquería, Taquerías Kisín, is known for pastor negro and holds a Michelin Bib Gourmand.

Career

Solís is the chef behind Taquerías Kisín in Mérida, a casual taquería outside the historic center whose signature is pastor negro, pork cooked in trompo style and seasoned with the Yucatecan spice paste recado negro. He also leads the tasting-menu restaurant Huniik and its counter, La Barra de Huniik.

When the Michelin Guide added Yucatán in 2026, both Huniik and La Barra de Huniik received one star, and Kisín was awarded a Bib Gourmand, giving Solís recognition at both ends of the price scale in the same edition.
