Overview
Kisín is a busy taquería outside Mérida's historic center run by chef Roberto Solís, whose restaurants Huniik and La Barra de Huniik received Michelin stars in 2026. Kisín itself was awarded a Bib Gourmand in the same edition, the first to cover Yucatán. It stays open late, until 2 a.m. on Fridays and Saturdays.
Menu
The house specialty is pastor negro: pork cooked trompo-style and seasoned with recado negro, the charred-chile spice paste of Yucatecan cooking. It comes as tacos, tortas, nachos or gyros. Empanadas of yellow masa and chaya, filled with queso de bola and served with roasted tomato salsa, are another highlight, along with bottled aguas frescas such as burnt pineapple. Churros and rice pudding close the menu.
