San Diego Magazine listed Tacos a Vapor El Güero among Tijuana's essential taco shops and dated it to 1960, making it one of the oldest names in the city's taco culture. It sells tacos al vapor, or steamed tacos, which are filled ahead of time and held in covered pots so that the tortillas soften in the steam.
The menu is limited to three fillings: shredded beef, beans with cheese, and chicharrón. Each order is topped with shredded cabbage, onion and red salsa. The format is close to the tacos de canasta of central Mexico and the tacos al vapor of Monterrey, but the cabbage garnish is a northern touch.
Context
Steamed tacos are a breakfast and lunch staple in Tijuana, quick and inexpensive alongside the city's better-known carne asada and adobada stands.
