Tacos de la Cima

From WikiTacos, the taco encyclopedia · Taquería

Tacos de la Cima is a Monterrey taquería specializing in tacos al vapor made from a family recipe.

Overview

Publimetro included Tacos de la Cima in its 2022 Monterrey taco route, describing a project built on a family recipe from Monterrey and on good-quality local ingredients. At the time it had two branches in the city and had been in business for about fourteen years.

The menu is devoted to tacos al vapor, the steamed tacos that are a regiomontano breakfast tradition. Fillings include potato, beans, chicharrón and deshebrada, shredded beef, served with green salsa. The tacos are filled in advance and kept warm in a closed container, where the steam softens the tortillas until they are tender and slightly glossy.

Context

Steamed tacos are sold at long-running Monterrey counters such as Taquería La Mexicana, and Tacos de la Cima represents a newer generation of the style.
