Tacos El Último Baile
Tacos El Último Baile is an Oakland taco business run by Dominic Prado that has operated as a pop-up, truck and restaurant, serving northern Mexican-style wood-fired tacos.
History
Prado built the business in Oakland over about a decade, working as a pop-up and a food truck before opening a restaurant. In 2022 What Now San Francisco reported that he was preparing a brick-and-mortar location inside the Fruitvale Public Market at 3340 E. 12th St., the former home of the Cambodian restaurant Nyum Bai, with tortillas from Tortillas de Harina MamaCuca.
The restaurant opened in October 2022. In September 2023 KTVU reported that it had temporarily closed, citing construction that fenced off its patio, a lease dispute with the landlord, The Unity Council, and shootings near the market. CBS San Francisco later reported that the Fruitvale space closed for good in July 2024 and that Prado had turned to catering. In mid-2025 he moved to Saluhall, the food hall in the Ikea building on Market Street in San Francisco, on a four-month trial.
Menu
The cooking draws on Norteño, Southwestern and New Mexican traditions. What Now listed grilled ribeye, chicken, brisket and carnitas served on corn and flour tortillas, and CBS described the tacos as wood-fired in the northern Mexican style.
