Alejandro Zárate is a co-founder of La 89, a Baja California-inspired taquería in Roma Norte, Mexico City, that holds a Michelin Bib Gourmand.

Career
Zárate founded La 89 in 2021 with Bernardo Galindo. The pair built the menu around the tacos, birria and tortas of Ensenada and Tijuana, with charcoal-grilled carne asada, handmade tortillas and northern-style guacamole. La 89 received a Bib Gourmand in the 2025 Michelin Guide Mexico and kept it in 2026.
