Carlos Gustavo Navarro Ávalos
Carlos Gustavo Navarro Ávalos, known as El Chino, is a taquero in Culiacán, Sinaloa, who runs a beef head taco cart founded by his father more than sixty years ago.
Career
According to Tus Buenas Noticias, Navarro began helping his father, Luis Navarro Guerrero, at the family taco cart when he was ten years old, working after school with his brother until the tacos sold out around midnight. He has sold tacos for about 45 years and took over the cart after his father's death.
The cart first served moviegoers near the old Cine Reforma, later stood near Culiacán's cathedral, and moved to a semi-fixed stand on Ángel Flores and Andrade in the Paseo del Ángel corridor after a clearance of street vendors.
Style
He sells only tacos de cabeza de res. The head is cleaned and boiled whole, then carved to order into cheek, eye, tongue, brain, palate or mixed meat. Navarro seasons the meat with nothing but salt and leaves customers to add salsa, onion, cilantro and lime. Regional music performers and Sinaloa politicians are among his customers.
