Tacos in Culiacán
Culiacán, the capital of Sinaloa, has a street-taco culture built on beef-head tacos sold from long-running carts, pork buche cooked in its own lard, carne asada and shrimp, with chilorio as the city's emblematic filling.
Beef-head tacos
Tacos de cabeza are a fixture of Culiacán mornings. Tus Buenas Noticias profiled Carlos Gustavo Navarro Ávalos, known as El Chino, whose cart stands on the Paseo del Ángel in the historic center and has served the city for more than sixty years; it was started by his father, Luis Navarro Guerrero. A whole beef head is simmered after the skin, horns and ears are removed, and the meat is cut to order: tongue, cheek, eye, brain, palate and snout, or a mixture called revuelta. The tacos are finished with green or red salsa, onion, cilantro and lime. The paper notes that while such tacos are not found everywhere in Mexico, they are deeply rooted in Culiacán. Another well-known stand, Tacos de cabeza de la Juárez, has operated since 1962.
Buche and other tacos
Luz Noticias calls Culiacán the capital of the buche taco, made from pork stomach cooked in its own fat, usually alongside tripe and maciza, and also rates the city's carnitas among the best in the state. A 2025 list of local favorites by Tus Buenas Noticias included a buche specialist serving tripe, panza and other cuts, a shrimp taco stand that also sells fish and breaded octopus, and a carne asada taquería that also makes vampiros. Tacos de guisado are eaten in the morning and at midday.
Chilorio and the state table
Chilorio, shredded pork cooked down with dried chiles, garlic, cumin and oregano, is the best-known Sinaloan pork preparation and is eaten in tacos and burritos. Larousse's gastronomic dictionary lists it among the traditional stews of the central municipalities around Culiacán, where evening cenadurías also serve pozole, asado placero, enchiladas and tacos dorados. Taste Atlas, as reported by Luz Noticias, ranked chilorio first among Sinaloan dishes and named sopes as a Culiacán favorite.
Los Arcos
The Los Arcos seafood group, whose Mazatlán branch is linked to the creation of tacos gobernador, opened its first restaurant in Culiacán in 1977, according to its own history.
