Tacos de Cabeza de la Juárez
Tacos de Cabeza de la Juárez is an evening head taco stand beside the Mercadito de la Juárez in Culiacán, Sinaloa, operating since 1962.
Overview
Tus Buenas Noticias calls this stand, next to the Mercadito de la Juárez and across from the Panteón San Juan cemetery, one of Culiacán's most famous taquerías since 1962. It serves the full range of head cuts: cabeza, lengua, maciza, ojo, sesos, cachete, oreja, molleja and paladar, on doubled tortillas with salsas and vegetables. It opens every evening until midnight, and its tables fill with families.
Context
Culiacán's taco culture is strong on tacos de cabeza, buche and carne asada, many of them sold from carts and family stands that have passed between generations. Doubled tortillas help hold the juicy head meat.
