Tacos de Cabeza El Chino is a beef head taco cart in the historic center of Culiacán, Sinaloa, run by Carlos Gustavo Navarro Ávalos and dating back more than sixty years.
Overview
Tus Buenas Noticias reports that the cart was started by Luis Navarro Guerrero and is more than sixty years old. His son, Carlos Gustavo Navarro Ávalos, known as El Chino, began helping at age ten, has sold tacos for about 45 years, and took over the business when his father died. The cart once stood near the old Cine Reforma, selling to moviegoers until late at night, and later near the cathedral; after a clearance of street vendors it moved to a semi-fixed stand at Ángel Flores and Andrade, in the Paseo del Ángel food corridor.
The tacos are of beef head (cabeza de res): the head is cleaned, boiled and carved to order into cheek, eye, tongue, brain, palate or mixed meat, seasoned with salt only and topped with green or red salsa, onion, cilantro and lime. It serves from early morning to mid-afternoon, Monday through Saturday. Its customers have included the singers La Gilbertona and Los Alegres del Barranco and former governors of Sinaloa.
Context
Culiacán's taco culture is strong on tacos de cabeza, buche and carne asada, many of them sold from carts and family stands that have passed between generations.
