Juan José Nidome Quintero
Juan José Nidome Quintero is a taquero in Culiacán, Sinaloa, and the owner of Tacos de Cabeza El Hijo del Profe.
Career
Tus Buenas Noticias reports that Nidome learned to make tacos de cabeza from his father, a taquero known as El Profe, working alongside him for eighteen years at a stand across from the Secundaria Emancipación in colonia Pemex, south Culiacán. After his father died he was excluded from the family business and spent a year as a laborer before saving enough to start his own stand on a cart he assembled from scrap metal.
His stand, named El Hijo del Profe (the teacher's son) in his father's honor, had operated for seventeen years by 2025. He cooks the head meat slowly for up to four hours each morning, and his daughter Yukiel and his wife help run the business.
