Tacos Crispín is a family carnitas taquería in León, Guanajuato, founded in 1970, known for breakfast tacos and carnitas volcanes.
History
Crispín Sandoval Villegas started the business in 1970 by buying a small taco cart, which he first set up on Calzada de Guadalupe in Colonia Obrera. It later operated behind a medical center and on bulevares Adolfo López Mateos and Las Torres. By 2019, Bonito León reported, it had five branches run by his children, who also handle catering for private events. La Silla Rota listed a Taquería Crispín in Balcones del Campestre among the city's best-known taquerías in 2023.

The specialty is carnitas, pork simmered in its own fat, in cuts including aldilla, buche (stomach), maciza and pierna, served as tacos, tortas and volcanes. The signature taco is large and topped with guacamole, melted cheese and cream. In 2019 hours were 8:30 a.m. to 1 p.m. on weekdays and until 2:30 p.m. on weekends, making it mainly a breakfast spot.
According to León's municipal historical archive, as summarized by Bonito León, taco stands began to multiply in the city in the 1970s and kept growing through the 1980s and 1990s, many of them around the San Juan de Dios neighborhood and the historic center.
