Overview
Wayan'e is a small taquería in Mérida whose name is also written Wayane. Its menu centers on the classic fillings of Yucatán: cochinita pibil, the achiote-marinated pork traditionally cooked in an earth pit, and lechón, roast suckling pork, along with marinated fish. Tacos are served on corn tortillas with the customary pickled red onion and habanero salsa.
The taquería also prepares the region's antojitos, including salbutes, puffed fried tortillas, and panuchos, tortillas stuffed with black beans before frying, both topped with shredded meat, lettuce, tomato and onion. Sopa de lima, the lime-scented chicken soup of Yucatán, is also on the menu.
