Mérida, the capital of Yucatán, is the center of a taco culture built on cochinita pibil and lechón, served with pickled red onion and habanero salsa, and in 2026 its Taquerías Kisín received a Michelin Bib Gourmand for a Yucatecan reinterpretation of al pastor.

Cochinita pibil

Mérida's defining taco filling is cochinita pibil: pork seasoned with recado rojo, a paste of achiote and spices, and traditionally cooked in a pib, an underground oven, though today it is often baked or steamed. Larousse's gastronomic dictionary calls it the most representative dish of Yucatán and describes it shredded into corn tortilla tacos with pickled purple onion or xnipec, a salsa of habanero, sour orange, red onion and cilantro. Food & Pleasure adds that it is eaten in tortas and panuchos as well.

The dish's age is disputed in Mérida itself. In 2021 Diario de Yucatán, the city's main newspaper, published a rebuttal to an official claim that cochinita was pre-Hispanic. Citing anthropologist Indalecio Cardeña Vázquez, it argued that pigs arrived with the conquistadors in the first half of the sixteenth century, so the dish is colonial, even if the pit cooking and achiote seasoning are older Maya practices.

Lechón and other fillings

Lechón al horno, pork leg marinated in spices and sour orange and oven-roasted, is served in Mérida with pico de gallo in tortas or tacos, according to Yucatán's tourism board, which calls the city the southern capital of culture and cuisine. Por Esto! notes that lechón is sold at street corners and markets on Sundays across the region. Larousse lists poc chuc, panuchos, salbutes, papadzules and sopa de lima among the traditional dishes eaten in the state.

Kisín and the Michelin Guide

In the 2026 Michelin Guide Mexico, Taquerías Kisín, a busy taquería outside Mérida's historic center, received a Bib Gourmand. Its signature is chef Roberto Solís's pastor negro: pork cooked trompo-style but seasoned with recado negro, the charred-chile paste of Yucatecan cooking. The same meat is also served in tortas and nachos, and the menu includes chaya empanadas filled with queso de bola. Solís's restaurant Huniik received a Michelin star in the same edition, and the guide also awarded a Bib Gourmand to Pueblo Pibil in nearby Tixkokob, which cooks meats in an underground pit for more than fifteen hours.

Influences

Larousse notes that Yucatecan cooking blends Maya, Spanish, mestizo and Lebanese roots, and that convent kitchens shaped the region's breads and sweets. Because Yucatecan food is generally mild, the dictionary explains, it is served with a range of salsas, many of them built on habanero chile.
