Taco culture

Start with al pastor in Mexico City, then follow the regional differences: battered fish tacos in Baja California, cochinita pibil in Yucatán, and grilled beef in the north. The tortilla, cut of meat, cooking method and salsa all matter. There is no single plate that represents every Mexican taco.
