Taquerías in the Michelin Guide

Since the first Michelin Guide Mexico appeared in May 2024, a number of taquerías have been recognized by the guide, most famously Taquería El Califa de León in Mexico City, which became the first taco stand to receive a Michelin star.

The first guide

Michelin's first Mexico selection was announced in mid-May 2024 and covered six states: Mexico City, Oaxaca, Quintana Roo, Baja California, Baja California Sur and Nuevo León. AFAR counted 18 starred restaurants, two with two stars (Pujol and Quintonil) and sixteen with one, plus 42 Bib Gourmands. Among the one-star restaurants was Taquería El Califa de León, a stand of about 100 square feet on Avenida Ribera de San Cosme in the San Rafael neighborhood, opened in 1968. Smithsonian Magazine reported that it was the first taco stand in Mexico to earn a star and one of the smallest establishments the guide had ever recognized; its signature is the gaonera, a thin beef steak seared with salt and lime on a fresh tortilla.

Bib Gourmand taquerías

Taco shops figured more heavily in the Bib Gourmand category for good value. In Texas Monthly, José R. Ralat listed Siembra Tortillería, Tacos Los Alexis, Taquería El Jarocho, Taquería Los Cocuyos and Tacos Charly among the Mexico City Bib Gourmands of 2024. The 2026 edition, announced in Guadalajara on May 20, 2026, added Bib Gourmands including Taquerías Kisín in Yucatán and Tacos y Gorditas Elvira in Jalisco, according to Excélsior.

Effects

Recognition brought crowds. Ralat described hours-long waits, a doorman and overflow seating at El Califa de León, confusion and long lines at Tacos Charly, and a 30 to 40 percent rise in business reported by Alexis Ayala of Tacos Los Alexis. He also questioned some of the guide's choices, arguing that Mexican food did not need Michelin's endorsement and that some well-known taquerías had been overlooked.

Later editions

El Califa de León kept its star in the second edition, announced in June 2025, but lost it in the 2026 selection, according to both Excélsior and the Wikipedia list of starred restaurants in Mexico. Gastrolab reported that it nonetheless remained among the guide's recommended restaurants. In the same 2026 edition the Mexico City arrachera taquería La Once Mil received one star, leaving it as the only starred taquería in the guide.
